Tatertot casserole: Crockpot style

We began making easy foods on Sundays last summer when we became convicted that our practice of observing the Lord’s Day was no where near what we believed it should be. The Westminster Shorter Catechism does an amazing job of summarizing the teaching of Scripture and in regards to the 4th commandment. It explains how Sunday is to be sanctified (or set apart) in question 60 as well as what is forbidden to do on the Christian Sabbath.
Q. 60. How is the sabbath to be sanctified?A. The sabbath is to be sanctified by a holy resting all that day, even from such worldly employments and recreations as are lawful on other days; and spending the whole time in the public and private exercises of God’s worship, except so much as is to be taken up in the works of necessity and mercy.
Q. 61. What is forbidden in the fourth commandment?A. The fourth commandment forbiddeth the omission, or careless performance, of the duties required, and the profaning the day by idleness, or doing that which is in itself sinful, or by unnecessary thoughts, words, or works, about our worldly employments or recreations.
Questions 57 – 62 also deal with our understanding of the Sabbath if you are interested.
What seems to many like something that must be done is something we have found wonderful to practice. There are Sundays when we don’t do so well and our focus on worship is very weak compared to the weeks that we do practice it with more intention. I would encourage you to consider what your Sunday (Lord’s Day) looks like and then study the Scriptures to see how you might better set it apart for rest and worship.

Well, Brian did a good job explaining the background and theology behind this post. In practice, it means I try to prepare things for lunch on Sunday on Saturday so it’s ready when we get home. We used to make Tatertot Casserole a lot in college, so when I saw this in a cookbook I thought it was worth a try, for old time’s sake. Crockpot meals get rated on a different scale than normal ones. Mostly cause you can’t compare something that had to be mixed all together to something that didn’t, at the most basic level I think. Anyways, we do a crockpot something almost every Sunday, and this is one of the better ones we think! (Again, it sneaks in the green beans, which is actually a veggie we would all eat anyways though.)

Really SP, really?

I thought I would try to give SP lasagna on a plate. Bad idea. I look over and she has the whole plate over her face trying to eat directly off of it. She tried to explain that she was just cutting out the unneeded middle man: hands- food directly from plate to mouth…almost.

Homemade Taco Seasoning

Jan 2009 - 25

I’m the worst at making that last minute run to the grocery store for the stinkin’ taco seasoning packet that I forgot when I went. I can’t seem to remember that that’s a part of the taco meal. And for the first time last night, it occurred to me that I bet I could make it (I might be the last person ever to realize this). Here’s the one I tried today and it was good enough that I’m sticking with it!

1 T Chili powder

1/4 t oregano

1/4 t garlic powder

1/4 t onion powder

1 1/2 t ground cumin

1 t black pepper

3/4 t sea salt

This is all per pound of beef or turkey. Added a little water like I would have with the packets too!

Happy Birthday Sweet Girl!

Sadie Piper's First Birthday - 79

Well, SP has been in our lives a year now, and it feels more like a few months. I don’t think it’s a secret that Brian and I aren’t huge fans of infants, so SP turning one is especially fun for us (not that we loved her any less, but now she’s getting cool and funner!) Sadie Piper is our firecracker. She’s not a fan of sleeping, but is an expert at walking. She’s getting pretty good at her sign language, but thinks “please” is “thank you.” She has a bruise on her forehead from a fall about 75% of the time, but never seems to mind. She recognizes people she knows with a squeal but still wants to be held by the stranger in line behind us at the store (lucky for me, most people are ok holding a baby that is reaching and whining for them!).

We celebrated her birthday on Sunday with a yummy steak lunch! She got cool toys!!

Goin' for a ride!

DSCF7368.JPG

It got up to 60 here today, which is amazing, so Brian took Becks on a bike ride in the new buggy thing the Shanclan gave us (thanks y’all!)! Becks has been coveting it just sitting in the garage and often gets in it just to sit. His face was priceless when I told him it was warm enough and that Brian was taking him on a ride! It’s something we really hope we can do a lot of when it warms up! Brian said they can talk to each other so they chatted the whole way to the park and then I got some story about rocks at the park when they got home. Here are a few pics!

Don't tell Pastor Tony

Jan 2009 - 09

I was chastised this summer by Pastor Tony for bringing Hunts ketchup to a picnic. I learned that another one of the many ways to ruffle his feathers is to bring the wrong brand of ketchup to an event. I listened to his whole speech on how ketchup is great and Heinz is the only way to go and the only reason people by Hunts is because it’s cheaper (sure, how else would I have picked a ketchup brand??). Anyways, the next time I had to buy ketchup, I stood in front of them and even though it hadn’t come from the pulpit (ex cathedra), I still couldn’t ignore his rebuke. So I caved and bought Heinz. We don’t eat a lot of ketchup, but I’m actually sold on Heinz now. It really is yummier. But don’t tell Tony, it’ll go to his head…

100 calorie snack

Brian’s watching what he eats, so I got him these fun little 100 calorie snacks! He opened them up and was a little disappointed! I thought they were cute…he thought they were deceiving and tried to show me that they looked bigger on the box. I hated to break it to him that they were smaller on the box than in real life! Dieting stinks! : ) He took little bites to make himself feel better about it. Jan 08 011
