I don’t really like peanut butter cookies. I always think I do when I see a picture like this
Then I want to make them. So I do, and I end up tossing most of them. I think my issue is that they are very unforgiving in the oven stage of baking. You really don’t want them to brown (cause then they get really hard once they’ve cooled, hence my having to toss them), but how do you know when they are done if they aren’t browning? I find them tricky little things. I remembered all of this before I started baking today. But then I thought about how yummy they looked again. I debated with myself. I decided to bake, with two changes: I was going to add chocolate chips, and I promised myself to take them out of the oven before I thought they needed to be. I’m really curious why chocolate chip pb cookies aren’t super popular! I’d never had them before today, and we’ve been missing out! I know you can put the Hershey’s Kiss on top, but I don’t like that you have to work at getting a good chocolate to cookie ratio in every bite. I will be making them again without the internal struggle next time!
Found this recipe here, added 2 cups chocolate chips (Brian brainstormed with me and we decided on semi-sweet over milk) at the end. It makes lots!
Mix together in bowl:
1 cup softened butter
1 cup creamy peanut butter
2 eggs
1 cup sugar
1 cup brown sugar
2 1/2 cups flour
1 tsp baking powder
1/2 tsp salt
1 1/2 tsp baking soda
Roll or scoop into balls, and mash down lightly!!! with a fork
Bake for 8-10 minutes at 375.

Try Hillary Clinton’s cookies. (I doubt they are hers, but that is the name…) WE use PB instead of shortening (for 1/2 of the amount, sometimes all) and they are too die for. Michael grew up on them. Chocolate, Oatmeal, Peanut Butter= BEST COOKIE EVER!

I completely agree! PB cookies have never been my favorite for the same reasons. We tried this recipe, including choc chips, last night and they are really good! I took them out after about 7 minutes and they are still soft today. Thanks for posting!
